Honey-Glazed Meatloaf w/ Spiced-Honey Sweet Potato Mash
This sweet-savory pairing makes the perfect comfort-food dinner for cold fall and winter nights. We recommend sourcing fresh Lancaster County ingredients as much as you can, starting with local honey, in-season sweet potatoes, and fresh kale. Local ground beef, eggs, milk, butter, cheese, and bread are year-round staples that will make this recipe even tastier.

Honey-Glazed Meatloaf
Serves 4–6
Ingredients
- 2 lbs ground beef (or a beef-and-pork mix)
- 1 cup fresh bread, cubed
- 1/2 cup milk
- 1 medium onion, finely chopped
- 2 cups fresh kale, stems removed and roughly chopped
- 2-3 cloves garlic, minced
- 2 large eggs, beaten
- 1/2 cup breadcrumbs
- 1/2 cup grated Parmesan or Romano cheese
- 1/2 cup shredded mozzarella cheese
- 2 tsp Worcestershire sauce
- 1 tsp salt
- 1 tsp black pepper
- 1 tbsp olive oil (for sautéing)
For the Honey Glaze
- 1/2 cup ketchup
- 3 tbsp honey
- Additional Parmesan/Romano (for topping)
Instructions
- Preheat oven to 350°F.
- Combine the cubed bread and milk in a small bowl. Let sit for 5 minutes until the bread softens into a thick paste, stirring and mashing occasionally.
- Heat 1 tbsp olive oil in a skillet over medium heat. Add the onion and sauté for 3-4 minutes until softened. Add the kale and cook for 2-3 minutes until wilted and tender. Stir in the garlic and cook for 1 minute until fragrant. Remove from heat and let cool.
- In a large bowl, combine the ground meat, soaked bread mixture, eggs, Worcestershire sauce, salt, pepper, both cheeses, breadcrumbs, and cooled vegetables. Mix gently with your hands until just combined being careful to avoid overmixing, which can make the meatloaf tough.
- Transfer the mixture to a lined baking sheet or lightly greased 9×5-inch loaf pan. Shape into a loaf if using a baking sheet, or press gently into the loaf pan.
- Prepare the glaze by whisking together the ketchup and honey. Brush half of the glaze (about 1/4 cup) over the top of the loaf.
- Bake for 45 minutes.
- Remove from oven, brush on the remaining glaze, and sprinkle with the grated cheese.
- Return to oven and bake for 15–20 minutes more, or until the internal temperature reaches 160°F (cooking past this will lead to dry meatloaf).
- Let the meatloaf rest for 10 minutes before slicing.
Spiced-Honey Sweet Potato Mash
Serves 6
Ingredients
- 1 1/2 lbs sweet potatoes, peeled and cubed (about 1-inch)
- 4 tbsp unsalted butter
- 2 tbsp honey
- 1/4 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/8 tsp smoked paprika (optional)
- Salt and black pepper, to taste
Instructions
Mash with a potato masher until smooth and creamy. Season with salt and black pepper to taste.
Add sweet potatoes to a large pot and cover with cold water. Add 1 tsp salt to the water and bring to a boil over high heat.
Once boiling, reduce to a simmer and cook for 8–10 minutes until the potatoes are tender.
Drain well, then return the potatoes to the pot over low heat for 30 seconds to evaporate any extra moisture.
Add the butter, honey, cinnamon, and nutmeg. Add the smoked paprika if you’d like a smoky contrast to the sweetness.
